Not really a proverb, but I try to remember the line from Forrest Gump (and usually forget it, so I might be misquoting here)
"Life is like a box of chocolates, you pick one and you never know what you're going to get."

Mine is an Italian proverb that my mother (very) frequently recited:

I should have raised pigs. At least you can eat them after.

(I hope I haven't offended anyone...)

It's usually, "Do not meddle in the affairs of dragons, for you a crunchy and taste good with ketchup"

But right now it'd have to be:
