peach cobbler? peach pie?



Desperately seeking recipe recommendations.

Simple Peach Salsa




Makes about 3 cups
2 ripe but firm peaches , pitted and chopped coarse
1 small red bell pepper , cored, seeded and sliced thin
1 small red onion , sliced into long, thin slices
1/4 cup chopped fresh parsley leaves
1 medium clove garlic , minced
1/4 cup pineapple juice
6 tablespoons lime juice from 3 medium lime
1 medium jalapeƱo chile or other medium hot pepper, minced
Table salt


Mix all ingredients, including salt and pepper to taste, in medium bowl. Cover and refrigerate to blend flavors, at least 1 hour or up to 4 days.

Make a simple peach pie. And maybe some jam. Oh and how about some sorbet? But you'll need an ice cream maker for that...

OHHHH they look so good. Peach Pie, Peach Cobbler, Peach Calflouti, peaches in fresh cream, Peach Jam, freeze some for winter peach compote, peach daiquiris, peach smoothies.

Pie. With a handful of blueberries and/or raspberries if you can still find those. If you do gin, I also have a lovely drink recipe involving peaches and frozen lemonade, but I'll need to run and track it down.

3/4 cup sugar, plus 1 tablespoon
3/4 cup water
2 tablespoons freshly squeezed lemon juice, divided
1 vanilla bean, scraped
4 medium peaches, peeled, pitted, and cut in half
8 ounces frozen raspberries, thawed
Vanilla ice cream, for serving

Preheat a grill to medium-high heat.

Place 3/4 cup sugar, water, 1 tablespoon of the lemon juice, and the seeds from the vanilla bean into a small saucepan and set over high heat. Bring the mixture to a boil and boil for 1 to 2 minutes. Remove from the heat. Add the peaches; spooning the sauce over them. Set aside.

Place the raspberries, the remaining 1 tablespoon of lemon juice, and 1 tablespoon sugar into the bowl of a food processor and puree. Pass the mixture through a fine mesh sieve into a small bowl. Cover and set in the refrigerator.

Once the grill is hot, place the peaches over direct heat and grill on each side for 3 to 4 minutes or until they are tender. Remove from the heat to a container with the syrup and cover with aluminum foil for 5 minutes.

To serve, place the ice cream into 4 bowls and top each bowl with 2 peach halves. Drizzle each bowl with the raspberry sauce and serve immediately.

Those are be-yoo-ti-ful! Being from the peach state, I have to say cobbler. Definitely.

This is my favorite cobbler recipe. It's from Paula Deen and super-easy. Now I just need your address and I'll be on my way over.

Ingredients:
4 cups peeled, sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons (1 stick) butter
1 1/2 cups self-rising flour
1 1/2 cups milk
ground cinnamon, optional

Directions:
Preheat oven to 350 degrees.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

Put the butter in a 3-quart baking dish and place in oven to melt.

Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

Slice them, put them in a frying pan with butter, cinnamon and brandy and cook them until they are heated through, then put them, steaming hot over vanilla ice cream.

***wait. I meant peach cobbler. And unfortunately, I don't have the recipe for it here. But I know it involves a lot of butter. And sugar. Yum.

If - and only if - you are feeling more hopeful, perhaps you could make and freeze a little peach puree for b_ _ _ food. If I calculate correctly, it will not yet be peach season when you will begin to need it next spring.

Halve peaches and put them in a buttered baking dish. Top generously with coarsely crushed Italian almond cookies and dot with more butter. Bake until bubbly.

How about cutting them in half, taking out the pit and putting them face down on the grill (set to about medium) for approximately five minutes on each side. Serve warm, fresh from the grill with vanilla ice cream. Yummy!

I like to simmer the peaches gently with just a dab of sugar. Put it in a glass pan with streusal(butter, sugar and a little flour) topping and pop it into the oven until brown (sorry, I have never used and acutal recipe)
Keeps the peaches true to taste without too much sugar.

I take the peaches, cut them down the middle, scoop out the pit and a little bit of the rough stuff to make a pocket. I fill that pocket with crushed cinnamon graham crackers, nutmeg, and a pat of butter on the top. Cook 425F for 30 minutes or until tender throughout. I serve with vanilla icecream or cool whip on the top! YUMMY!
